Isn't Dose feminine (i.e. die Dose)? Then it would be "Ich esse eine Dose".

That's "in", not "im". So the sentence becomes "Ich esse in einer Dose".

Same here.

If the noun after in is masculin, then it become "in dem [noun]", often
abbreviated to "im [noun]".
