I think the distinction is expressed in this sentence:
QoghlIjDu' SopQo!  BSE vIHev 'e' vISuD.  BSE vIHevchugh, yablIj vIchIl.

Which I hope means "don't eat brains.  You risk getting BSE. If you get BSE 

you lose your mind."  (be' Quch jIHbe'.)

In other words, QoghlIj just means the organ, like a liver or oesophagus, while yab means

that, but also your powers of thinking and feeling.
